A deboning knife is mainly used to remove bones on chicken, meat or fish. Generally, deboning knives are 12 cm to 17 cm. The reason why the blades on boning knives are not as thick as many other chef's knives is that the precision in boning is greater with a narrower blade.

The kitchen knives in the Ikon series are the jewel in the collection of the German producer Wüsthof from Solingen. Here you get a well-balanced quality knife cast in a piece of specially tempered stainless steel (X50CrMoV15) which is hardened to a hardness of 58 HRC. The sharpening angle is 14 degrees per side, and Wüsthof's Precision Edge Technology (PEtec) gives the knife a durable sharpness. A triple riveted ergonomic handle with specially designed bolster provides perfect comfort and control. A nice design that looks good in the kitchen. The handle is made of grenadilla wood (African Blackwood), which is one of the hardest woods in the world. Due to the extreme density of the grenadilla, minimal porosity and high content of resin, the handle is highly insensitive to moisture.
