The knife sharpener 2100 from Chef'sChoice is a professional three-stage model with a detachable sharpening module.

Step 1 creates a base egg on the knife.

Step 2 refines the base edge and

Step 3 polishes the base edge.

Steps 2 and 3 are used the most, step 1 is only used when the base edge has been destroyed.

On the back of step 3 there is a small button that you can slide to the right and left, it is for cleaning the grinding wheels and should be used at regular intervals to keep the machine in trim.
