Chef's knife

A good chef's knife is the cornerstone of your knife set and a must-have knife in any kitchen. It is often described as the kitchen's manual food processor, and is used to chop, cut and dice all types of ingredients. A chef's knife comes in many different lengths and which one fits best is often about feeling, but the most common blade length is 20-24 cm, although some chefs prefer a longer blade for extra weight and smoother slicing of meat. Traditionally, the blade is convex so that the knife can easily be "rocked" against the cutting board with a minimum of force. Some varieties have holes in the blade or grooves on the side of the edge, so-called dimples, to make the food you cut easier to drop from the blade.
