Honesuki

Honesuki is a Japanese boning knife that is characterized by its triangular shape and a higher blade height at the neck of the knife. The Honesuki knife is especially suitable for deboning a chicken. The tip of the knife works after the legs just like the European deboning knife, while the high heel goes through joints and the sternum of the chicken. The heel is high enough not to hit the fingers in the cutting board, which means that the knife is also useful as an utility knife.
