Knife types

Choosing a knife can be really difficult if you do not know exactly what you are looking for. It is a jungle of difficult names, different angles, handles and types of steel. We usually ask our customers if they are looking for Japanese or European knives, which usually gets questioning looks and not completely obvious answers. So let's explain a little how we mean, the question is important because it is a cornerstone in choosing the right knife, Japanese knives can be compared to a nice sports car while the German knives are more of a good and safe off-road car. We can of course delve into different grinding angles and steel types between the different knife traditions, but to simplify it a bit you can say this: Do you use your knives to prepare and make nice food and want a really sharp and stylish knife, and is interested in handling and letting the knives hang in front then Japanese knives are preferable. If, on the other hand, you use your knives several times a day, work in the kitchen or want knives that last a long time, are comfortable to work with and that keep the sharpness and can withstand a little "beating" then we would recommend the European knives.
