This knife has a tanto profile tip that gives the knife a unique and eye-catching aesthetic. The knife is a versatile kitchen knife that can be used for chopping, cutting, slicing and dicing.
The blades in the Takahiro Miyazaki knives are hand-forged from Japanese Aogami carbon steel (Blue Paper Steel). This steel, with its high carbon content, is known for its use in Japanese swords. Japanese knifesmiths have optimized this steel, which is characterized by allowing a very fine cutting geometry and having a high edge retention, for use in kitchen knives. Since no chromium has been added, the steel is not stainless but rather rust-resistant. But only the absence of the relatively coarse-grained chrome allows the blades to be sharpened to a tremendous sharpness, comparable to razors.
Please note: These knives are produced from high quality carbon steel. The carbon steel wants to dull over time and get a patina, which is proof of real carbon steel. The patina will not affect the properties of the blade. For best results, the knife should be hand washed and immediately dried completely dry. The knife must not be machine washed! If the knife is not maintained properly, it will rust. Feel free to use camellia oil to protect the knife against moisture and to dissolve possible corrosion attacks.
