SHUN PREMIER TIM MÄLZER is an exclusive knife series from KAI and a real craft. SHUN means "on top of perfection". The surface of the knives is hammered by hand, which is called Tsuchime in Japan, and it provides both timeless aesthetics along with ultimate sharpness. The blades have a solid core of VG-MAX steel with a hardness of 61 ± 1 HRC. The brown walnut handle has an ergonomic shape and is suitable for both left and right hands. Each Shun knife gets its unique and individual character by refining the natural beauty of the damask pattern. That's why every Shun knife is unmistakable and unique - a work of art united by craftsmanship,  technique and design. The technique for making the finest chef's knives inspired by the masterful art of the Samurai sword enable the Shun series' knife blades to be shaped like Western knives.

What is an utility knife / Universal knife?

The universal knife is perfect for a variety of small tasks where more precise cuts are required, such as trimming broccoli, green beans and other smaller vegetables. Some chefs use it in their hand as a large peeling knife. Others like the small size and use it as an alternative to the chef's knife. It has a slightly curved shape that allows for moderately rocking cuts. It is flexible enough to peel an onion by hand and then slice it up in a short time. Universal knives are sometimes called sandwich knives because they work well for all toppings on a sandwich - from vegetables with a thin skin, such as tomatoes, to meat and cheeses.
