Honesuki is a boning knife that is specially designed to cut and bone chicken and poultry, but many have discovered that the knife is also useful as a fillet knife for smaller fish. These knives are rigid and robust knives with a triangular profile and pointed tips. While honesukis are very robust knives, they are designed to cut through the joints of a bird, not split through the leg. For these tasks, we recommend a cleaver, deba or bird scissors.

MV-Pro is Masahiro's top series made in classic European tradition. The knives are made of Masahiro's own patented and award-winning MBS-26 knife steel and are equipped with a well-balanced bolster and a strong wooden handle. The hardness of the steel amounts to 58-59 HRC.
