Hankotsu is a deboning knife that is often described as the Japanese variant of the classic European deboning knife. This knife is used to bone out and trim meat. The thin blade and the pointed tip can be easily inserted into a cut and cut along the bones, tendons or fat. These knives are also often used on hanging carcasses and are then held with the knife wall downwards in a reverse knife grip. While hankotsu's are very robust knives, they are designed to cut through flesh and tendons, not split through bones. For these tasks we recommend a cleaver / meat axe.

MV-Pro is Masahiro's top series made in classic European tradition. The knives are made of Masahiro's own patented and award-winning MBS-26 knife steel and are equipped with a well-balanced bolster and a strong wooden handle. The hardness of the steel amounts to 58-59 HRC.
