Fine and precise - with its long narrow blade, the slicer knife is the specialist for cutting ham, grilled meat and fish. Sujihiki is the Japanese name for a slicer knife.

This sujihiki has a 3-layer knife blade with a core of hard MC63 (refined SG2 steel) Micro Carbide powder steel, CRYODUR® hardened to a hardness of approx. 63 HRC covered with 2 layers (Tsuchime) hammered stainless steel which gives the knife an elegant look and prevents the raw material from sticking during use. Sharpened according to the Honbazuke method, a hand sharpening method that gives the knives the legendary "Katana edge".

A nice ergonomically beautiful handle in durable, easy-care cocobollo package wood decorated with a mosaic rivet, red and brass-colored spacers and a decorative final steel lid.
