A wonderful Japanese gyutoh chef's knife in beautiful damask steel. A good chef's knife is the cornerstone of your knife set and a must-have knife in any kitchen. It is often described as the kitchen's manual food processor, and is used to chop, cut and dice all types of ingredients. The blade is convex so that the knife can easily be "rocked" against the cutting board with a minimum of force.
This chef's knife has a 133-layer knife blade with the ultra-hard high-quality Micro Carbide powder steel ZDP189 (or MC66 in Miyabi language) with a hardness of 66 HRC. Surrounded by 132 more layers of steel, this core steel forms a beautiful floral pattern called "Flower Damask". Each knife has a unique pattern. . Grinding angle is about 10 degrees.
The handle is a traditional D-shaped handle in black maple, a dark and exclusive type of wood with a distinctive pattern that provides a striking contrast to the shiny knife steel. The handle is decorated with a mosaic rivet and a decorative final steel lid with engraved Miyabi logo.
