Fine and precise - with its long narrow blade, the slicer knife is the specialist for cutting ham, grilled meat and fish. Sujihiki is the Japanese name for a slicer knife.

This sujihiki has a 101-layer knife blade with core of hard MC63 (refined SG2 steel) Micro Carbide powder steel, CRYODUR® hardened to a hardness of approx. 63 HRC. This core steel is covered with 100 layer stainless steels that form a beautiful floral pattern called "Flower Damask". Each knife has a unique pattern. Grinding angle is about 10 degrees per side.

The handle is a traditional D-shaped handle made of Masurian birch from Finnish Lapland, a light and lively wood with a distinctive pattern that provides a striking contrast to the shiny knife steel. The handle is decorated with a mosaic rivet and a decorative final steel lid with engraved Miyabi logo.
