A peeling knife is similar to a chef's knife, but is significantly smaller and therefore allows more precision in the work for small jobs. It is often used in the preparation of fruits and vegetables, as the narrow blade makes it easier to change direction in the middle of the cut. It can be used for peeling, removing seeds and stems, and shaping decorative shapes in fruits and vegetables.


The kitchen knives in the Ikon series are the jewel in the collection of the German producer Wüsthof from Solingen. Here you get a well-balanced quality knife cast in a piece of specially tempered stainless steel (X50CrMoV15) which is hardened to a hardness of 58 HRC. The sharpening angle is 14 degrees per side, and Wüsthof's Precision Edge Technology (PEtec) gives the knife a durable sharpness. A triple riveted ergonomic handle with specially designed bolster provides perfect comfort and control. A nice design that looks good in the kitchen. The handle is made of grenadilla wood (African Blackwood), which is one of the hardest woods in the world. Due to the extreme density of the grenadilla, minimal porosity and high content of resin, the handle is highly insensitive to moisture.
