Each knife is precision forged from a single piece of steel using Zwilling's Sigmaforge process, an exclusive forging technology that guarantees exceptional strength, hardness and durability with just the right amount of flexibility. The knives are ice-hardened with Zwilling's Friodur technology, which is a patented four-step process that involves freezing the knife steel to -70 ° C, which provides a hard, tough and corrosion-resistant knife blade that can maintain a long-lasting good sharpness. Sharpening angle on all knives is 35 degrees except for the Santoku knives which are 20 degrees.
