Honseuki is a Japanese boning knife that is specially designed to cut and bone chicken and poultry, but it is also useful as a fillet knife for smaller fish. This knife is stiff and robust with a triangular profile.

A metal bolster gives the knife a nice balance and prevents dirt from accumulating between blades and handles.

While honesukis are very robust knives, they are designed to cut through the joints of a bird, not split through the leg. For these tasks, we recommend a cleaver, deba or bird scissors.
