Kai Shun's cutting boards are made in a single piece of FSC-labeled Honoki, a cypress that only grows in Japan. Known as the "wood of fire" due to its toughness, Hinoki wood has been used for centuries in Japan as a construction material. What makes this wood excellent for cutting boards is that it has natural anti-bacterial properties and has a natural resistance to water and moisture due to the fact that it absorbs little water. The tree is light and all cutting boards are made of a single solid piece cut from specific margins around the trunk, which gives the product an unusual strength and durability. The surface is gentle on the edge of the knife so that they keep the sharpness longer.

Care tips:

- Moisten the cutting board before each use as it helps to resist staining.

- Wash with a gentle detergent, towel dry, then allow to air dry (but not in direct sunlight).
