Honesuki boning knife in the MAC Pro series, also known as the Mighty series. Honseuki is a Japanese boning knife that is specially designed to cut and bone chicken and poultry, but it is also useful as a fillet knife for smaller fish. This knife is stiff and robust with a triangular profile. The knife blade in this knife is made of AUS-8 steel and is ice hardened for extra durability and sharpness. The handle is made of reinforced wood and has a bolster for good balance.

While honesukis are very robust knives, they are designed to cut through the joints of a bird, not split through the leg. For these tasks, we recommend a cleaver, deba or bird scissors.
