The sharpening angle is 14 degrees per side, and Wüsthof's Precision Edge Technology (PEtec) gives the knife a durable sharpness. A triple riveted handle in hygienic POM material (Polypropylene) ensures long durability and hygienic use. The knife is NSF-certified and approved for use in professional kitchens.
