With its narrow, slightly curved blade, this knife is ideal for boning poultry, trimming meat and filleting fish. The sharp tip and firm spine offer confident handling around joints and tight areas.

Forged from a single piece of high-carbon stainless steel (X50CrMoV15) and hardened to 58 HRC. The curved blade is hand-polished to a 29° edge. The ergonomic POM handle is triple-riveted to a full tang for strength and hygiene.
